Our Land
Territory
Our facilities and plots are located in Olaberria, known as the Goierri balcony. This privileged location places us between the Aralar and Aizkorri natural parks, giving the area a unique and exceptional natural beauty.
As for the terrain, our lands are characterized by their clay composition. This characteristic, combined with the climatic differences compared to coastal territories, allows us to produce a unique and singular product.
From Bengoetxe, we strive to reflect the beauty and authenticity of our land in every bottle of our txakoli.
The Vine
The vast majority of vineyards we use for the production of our different varieties of txakoli come from the native varieties Hondarribi Zuri and Hondarribi Zuri Zerratia, which are complemented by a small plot of the Gros Manseng variety.
The Harvest
The harvest is carried out by pampering the fruit and prioritizing quality. We opt for mechanical harvesting, which allows us to pick healthy grapes with the exact degree of ripeness and transport them to the winery in ten minutes, ensuring their integrity and avoiding any minimal oxidation.
Elaboration
The elaboration process follows the following steps after pressing:
First step
Maceration: 10ºC for 24 hours, thus obtaining greater complexity and aromatic intensity.
Second step
Fermentation: Without added yeast in stainless steel tanks at a controlled temperature.
Last step
As a final step, our Bengoetxe Berezia txakoli is aged on its lees for 4 to 6 months.
A ripe fruit, its juice and minimal transformation, a quality wine.
