The singularity of the wines with Designation of Origin Txakoli stems from the characteristics of the environment in which it is grown, a low-altitude mountainous terrain; a mild Atlantic climate and indigenous varieties of grapes suitable for the environment where they grow, especially Ondarribi Zuri, gives the txakoli a special personality that sets it apart from the rest of the wines.
A feature of the development of txakoli Getaria is that after fermentation rests on the lees and does not carry out any transfer to preserve the small bubble; the wine is clarified by natural sedimentation in the tank itself.
